Pork tenderloins are the most tender cut of meat, cut from along the backbone. Like all heritage meat, best when cooked low and slow to prevent overcooking and toughness. They are excellent brined and roasted, grilled, or stir fried and can be cooked whole or cut into medallions and pan-seared–a delightful cut that cooks with ease and stays tender and juicy no matter the preparation.
